A vegetarian rice dish inspired by the popular Middle Eastern mujadara. Brown rice is cooked with cumin, cayenne, and a pinch of cinnamon, then layered with green lentils and caramelized red onions with cumin seeds. Mixed with toasted pumpkin seeds and roasted red peppers for some crunch and color. Served with a side of sesame-roasted carrots and a fresh spicy cilantro ‘shug’ sauce made with garlic, jalapeño, and lemon.

Microwave (800W): Remove the cardboard sleeve. Partially open the film to remove the cup from the meal and fold the film back. Place the container in the microwave and heat the meal for 3.5 minutes. Let the meal rest for 1 minute before removing the film. Be cautious of hot steam when opening. Add the contents of the cup to the meal.
